TORTILLAS
INGREDIENTS:
2 cups flour tortilla mix
1/2 cup warm water
Preheat griddle to 400-425 degrees. Add warm water to tortilla mix in
a large bowl. Mix well. Knead for about 5 minutes until dough is
smooth and elastic. If dough appears sticky, add a little more mix.
Cover dough with a damp cloth and let rest 15 minutes Divide
dough into 8 portions. Roll out on a lightly floured surface to 1/8
inch thickness. Cook 1 1/2 minutes on each side until lightly browned.
YIELD: 8 tortillas

Steve made a double batch of the flour tortillas and they certainly were
good. Tortillas are served in Texas like we serve toast and biscuits
back here in North Carolina. I picked up a bag of Tortilla mix and
will give it a try in the very near future. Anyone that has not had
fresh home made tortillas, you owe it to yourself to do so. The "store
bought" ones are certainly not as good! Steve's Mother Connie
had the edge on him for rolling the tortillas out in a circle, but Steve's
tortillas were outstanding!
