MURRAY'S MEXICAN MEATLOAF
INGREDIENTS:
2 lbs. ground beef or ground venison
2 eggs, well beaten
1 cup bread crumbs
24 oz. jar Pace medium or hot Salsa
2 teaspoons salt
1/2 teaspoon fresh ground black pepper corns
1/4 teaspoon Italian seasoning
Mix all ingredients reserving 12 ozs. of Salsa for the topping.
Lightly grease a 9 x 13 inch Pyrex dish and add mixed meatloaf and shape
into a loaf. Indent the top of the meatloaf with your fingers and add the
balance of the salsa on top. Place in a pre-heated 350 degree oven and
bake for 1 hour. Serve with your favorite sides.
YIELD: 8 or more servings

This a quick and easy meatloaf recipe and Linda Murray planted the seed
for my Quick Fix Chili Bean recipe by the usage of the salsa since it has
everything you need already precut and seasoned.....Murray definitely
"Cooks smarter not harder"...grin now. A few sequence pixs

PS Linda Murray's original recipe called for 1 lb.
ground beef, 1 slice of crumbed loaf bread and 1/2 the other ingredients
listed but since I package my own ground venison in 2 lb. vacuum sealed bags
the recipe was adjusted accordingly. Pixs below:
