JOYCE'S CREAM CHEESE MASHED POTATOES
INGREDIENTS:
4 lbs. baking potatoes
8 ozs. sour cream
peeled and quartered
8 ozs. cream cheese
1 1/2 teaspoons salt
1/2 teaspoon black pepper
butter, melted, optional* 1/2 cup butter
or margarine
fresh parsley, optional*
In large stock pot over high heat combine potatoes with enough water to
cover. Bring to a boil. Reduce heat to medium; simmer until
potatoes are tender, about 25 minutes. Drain; return to pot. Add
cream cheese, sour cream, butter, salt and pepper. Mash until smooth.
*Serve drizzled with butter and sprinkled with parsley, if desired.
YIELD: 12 servings

Above potatoes cooked on 01-04-09...A few sequence pixs but "brain
locked" doing something else and didn't get the entire sequence....maybe
next time....grin if you must! Those mashed potatoes are wonderful to
say the least .

Note: I didn't use baking potatoes and needed to use up what
potatoes I had on hand...a little frugal...I know!

The little vegetable peeler makes easy work out of potato peeling and
quick too!

My bride mashing the cooked potatoes with sour cream and cream cheese.
There were a pile of mashed potatoes left over and hope our In-Laws will help
us finish them off! This recipe is for a family or family get together
for sure!
If you desire loaded mashed potatoes similar to what Chili's serves,
leave the peeling on about 1/3 of the potatoes!
