ASPARAGUS SPEARS
INGREDIENTS:
1 bunch fresh asparagus spears, trimmed
1 tablespoon olive oil
1 tablespoon butter
1 medium shallot, chopped fine
1 clove garlic, chopped fine
Sea Salt (to taste)
Fresh ground black peppercorns
1/4 lime, juiced
Lime slices for garnish
Parmigiano Reggiano cheese, grated (optional)
Melt butter with olive oil in a large skillet over medium heat adding garlic
and shallots; cook for 2 minutes. Add asparagus spears and cook with
lid on skillet for about 5 minutes until tender. Serve with squeezed
lime juice over hot asparagus, salt and pepper to taste and add fresh grated
Parmigiano Reggiano cheese. Garnish with lime slices.Pix below of

This is a very easy recipe to do and is outstanding providing a very nice
contrast to the Cornish hens with orange sauce.
