Tea Cakes

TEA CAKES

INGREDIENTS:

2 cups self-rising flour         1 egg, beaten slightly
1 cup sugar                       1/2 cup lard
1 teaspoon vanilla                  milk

Mix all ingredients together as if making bread.  Add only enough milk to make dough stiff enough to roll out thin.  Roll or cut out. Place on baking sheet and bake at 350 degrees for ten minutes or until light brown.

Note: Grandma Coley use to make tea cakes by the dish pan.  A lot of folks wonder where the name tea cakes comes from; well  the only thing that comes mind is; people on the farm or out in the country years ago did not have ready or easy access to the different kinds of soft drinks and beverages available as today. Therefore, out of necessity they made tea to drink on a somewhat regular basis.  When someone was served tea to drink, they naturally had a light cookie or snack to  serve along with the tea. That is my best guess.
