RAISIN CRISSCROSS COOKIES
INGREDIENTS:
1/2 cup shortening, part
3/4 cup sugar
butter or margarine
1 egg
1/2 teaspoon lemon extract 1
3/4 cups all-purpose flour
3/4 teaspoon cream of tartar
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup raisins
Heat oven to 400 degrees. Mix thoroughly shortening, sugar, egg and extract.
Measure flour by dipping method or by sifting. Blend flour, cream of
tartar, baking soda and salt. Stir into shortening mixture. Mix
in raisins. Roll in 1-inch diameter balls. Place about 3-inches
apart on un-greased baking sheet. Flatten with fork dipped in flour,
making a crisscross pattern. Bake 8-10 minutes.
YIELD: 3 dozen
Note: These cookies have been made for the kids since the early
1970's and "Tweet" is still making them, but now mainly for the grand boys.
