Puffy Apple Pancake

PUFFY APPLE PANCAKE

INGREDIENTS:

2 lbs. Golden Delicious apples, peeled, cored and thinly sliced into wedges
1 cup all-purpose flour
2 tablespoons butter
1 cup milk
2 eggs plus 2 egg whites
1/4 teaspoon salt
4 tablespoons sugar (reserve 1 tablespoon)
1 teaspoon vanilla
1 teaspoon ground cinnamon
Powdered sugar
Maple syrup
Orange or Apple Marmalade (optional) topping

Heat oven to 425 degrees. Melt butter in large ovenproof skillet.  Add apples, 3 tablespoons sugar; cook, stirring 15-20 minutes until apples are tender and liquid has evaporated.  Stir in vanilla and cinnamon.  Remove from heat.  Beat together milk, eggs, egg whites, remaining 1 tablespoon sugar and salt in bowl.  Gradually whisk in flour until well blended and smooth.  Pour batter over hot apples.  Bake in 425 degree F. oven for 20 minutes.  Reduce heat to 350 degrees; bake 10-15 minutes until puffed and browned. Sprinkle with powdered sugar.  Cut into wedges and serve with your favorite Maple syrup, orange or apple marmalade.

Recipe from Betty Joe Porter with a couple modifications.  My bride fixed this puffy apple pancake for the kids and myself many decades ago at the old home place.

YIELD:  6 to 8 servings of 1 wedge each.

NOTES:  You can substitute canned apples if desired and use self-rising flour which will really puff the pancake up.  I used one of our old camping cast iron frying pans manufactured by Lodge and it works good as ever.  Two days ago I pan seared a couple ribeye steaks in the same cast iron frying pan, cleaned and re-seasoned it with vegetable oil spray.  I used only two Fuji apples but 4 would have been better.  Excellent taste and texture with just a hint of tartness from the Fuji apples which complemented the sweetness of the topping.

One of my lovely food critics and taste testers stated it looked more like a custard than a pancake and it certainly does with only a couple sliced apples used.  Next time I make this recipe, I will use the correct amount of apples for comparison.

This is a good recipe to change up your breakfast routine when your "sweet tooth" is acting up.....grin if you must!
