KILLER WILD PERSIMMON PUDDING
INGREDIENTS:
2 cups persimmon pulp
3 eggs
1 1/2 cups sugar
1 1/2 cups flour (self-rising)
1/4 teaspoon salt
1 1/2 cups milk
1 stick margarine or butter
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
Blend all ingredients and pour into a lightly greased baking dish13X9X2 or
smaller. Bake at 300 to 325 degrees for about an hour until done.
NOTES: This recipe was developed, tried and tested by Herbert
Jackson, Correctional Administrator I, at the Brown Creek Correctional
Institution, Polkton, NC who is from Carthage, NC and quote "this pudding
taste very much like the persimmon pudding Grandma Jackson made."
Mr. Jackson stated he never got the individual recipe from his Grandma and
had to judge by taste and texture to formulate this recipe. I received
this recipe from Herbert Jackson on 09-12-08 and will add a pix of it as
