Peach Cobbler

TWEET'S PEACH COBBLER

INGREDIENTS:

1 stick margarine                              1 cup all-purpose flour
1 cup milk                                          1 cup sugar
1 1/2 teaspoons baking powder     3 (29 oz.) cans sliced peaches (well drained) measures out to 6 cups of drained peaches
1 teaspoon vanilla                            1 teaspoon cinnamon

Combine sugar, flour, baking powder, vanilla and milk together.  Melt margarine and add to the mixture. Pour into a 3-quart casserole dish.  Put drained peaches on top and sprinkle with cinnamon.  Bake 375 degrees about 45 minutes or until brown. YIELD:  8 servings or more if Bubba doesn't show.

VARIATIONS:  You may use self-rising flour and leave out the baking powder.  Canned milk also makes this recipe richer in flavor. Fruits that may be used: blueberries, blackberries, cherries, apples or any canned or frozen fruit and use real butter.

Note: This is a "quickie" peach cobbler and does not stay in the dish too long.  Its simple to prepare and very delicious.  A couple scoops of vanilla ice cream of top of a bowl of this peach cobbler served hot will make a sweet tooth dance!  Most of these type of cobbler recipes do not have enough fruit in the cobbler.  Don't let the 3 (29 oz.) cans of sliced peaches scare you away from this recipe because there is 1 can of peach juice in each 29 oz. can of peaches.  Tweet's Peach Cobber recipe has plenty of fruit!
