Old Fashioned Oatmeat Cookies

OLD-FASHIONED OATMEAL COOKIES

INGREDIENTS:

1 cup raisins              1/2 teaspoon baking powder
1 cup water                   1 teaspoon baking soda
3/4 cup shortening       1 teaspoon salt
1 1/2 cups sugar          1 teaspoon cinnamon
2 eggs                       1/2 teaspoons cloves
1 teaspoon vanilla       2 cups rolled oats
2 1/2 cups plain flour

Simmer raisins and water in saucepan over low heat until raisins are plump, 20-30 minutes.  Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup. Heat oven to 400 degrees.  Mix shortening, sugar eggs and vanilla.  Stir in raisin liquid. Measure flour and sift together flour, baking powder, baking soda, salt and spices; blend in.  Add rolled oats, nuts and raisins.  Drop by rounded teaspoonfuls of dough about 2-inches apart on un-greased baking sheet.  Bake 8-10 minutes, or until lightly browned.

YIELD: 6 to 7 dozen
