MAMA'S RICE PUDDING
INGREDIENTS:
1 cup sugar
1/2 cup raisins
2 cups cooked rice
3/4 cup milk
1/2 teaspoon ground nutmeg
1 pinch of salt
Mix all ingredients. Place in buttered dish and bake at 325 degrees
until rice has absorbed milk and is brown on top.
Note: Mama, Mary Francis "Della" Coley cooked this for us
when we were very little. I miss her very much. Recipe and
comments from Ann Porter March 6, 1999.It has been nearly forty (40)
years since I have had the above rice pudding. Folks back in lean
times didn't throw any left over food items away if it could be used at a
later date without the chance of spoiling. Things like left over bread
was converted into bread pudding and left over stew beef was turned into
hash of which the stew beef was chopped up and fried in a skillet with some
onions and served with rice.
