LIZZIE PORTER'S CORNBREAD

INGREDIENTS:

2 cups self-rising cornmeal
1 cup buttermilk
1 egg
1 teaspoon sugar
1/3 cup oil

Mix dry ingredients in a medium sized mixing bowl and add buttermilk, egg and vegetable oil or oil of your choice and stir until mixed.

Place in a well greased 9 inch diameter pie pan and bake at 400 degrees for 30 minutes until done and golden brown on top.

This recipe was used by Lizzie Porter, my grandmother on my Dad's side of the family.  Lizzie Porter for what ever reason, did not give out recipes and most of her recipes were in her head.  However, my sister Susan Pettigrew just happened to be present when Lizzie Porter made her cornbread and made mental notes of the recipe.  I guess my sister got the last laugh anyway....grin now.

Below pix of Lizzie and George Porter taken a few decade ago...both lived to be 93.  Lizzie was 8 years younger that George and was in excellent health until a few months prior to her death.
