LEMON SQUARES
INGREDIENTS:
1 cup all-purpose flour
2 eggs
1/2 cup butter or margarine
1 cup granulated sugar
1/4 cup confectioners' sugar 1/2 teaspoon
baking powder
1/4 teaspoon salt
2 tablespoons lemon juice
Heat oven to 350 degrees. (mod.). Measure flour by dipping method or
by sifting. Blend flour, butter and confectioners' sugar thoroughly.
Press evenly in square pan, 8 x 8 x 2 inches, building up 1/2 inch edge.
Bake 20 minutes. Beat rest of ingredients together. Pour oven
crust and bake about 25 minutes more or just until no imprint remains when
touched lightly in center.
YIELD: 25 squares
