LEMON CRINKLES

INGREDIENTS:

1/2 cup shortening                         1 1/2 cups all-purpose flour
1 cup brown sugar (packed)            1/2 teaspoon baking soda
1 egg                                                  1/2 teaspoon cream of tartar
1 tablespoon grated lemon rind      1/4 teaspoon salt
1/4 teaspoon ginger                               Granulated sugar

Heat oven to 350 degrees.  Mix shortening, sugar and egg thoroughly; blend in lemon rind.  Measure flour by dipping method or by sifting.  Blend dry ingredients; stir into sugar mixture.  Roll in 1 inch diameter balls; dip tops in granulated sugar.  Bake on              un-greased baking sheet 10 to 12 minutes.

YIELD: about 3 dozen
