CINNAMON RAISIN BREAD

INGREDIENTS:

1 1/3 Cups Water
4 1/4 Cups Bread Flour
3 Tablespoons Sugar
2 Tablespoons Dry Milk
1 1/2 Teaspoons Salt
2 1/2 Tablespoons Butter
1 Teaspoon Cinnamon
2 1/2 Teaspoons Active Dry Yeast or Rapid Rise Yeast  (Must change the Basic Course machine setting for each type of yeast)
1 Cup Raisins

This recipe if for usage in the Zojirushi Home Bakery Virtuoso Breadmaker model BB-PAC20 or other similar models.

Precisely measure all the ingredients and add them into the Baking Pan in the following order;  water, flour (make a mound of flour), sugar, dry milk, salt, butter and cinnamon.  Make a depression in the middle of the flour and place the yeast.  Note:  Make sure the yeast does not touch the liquid.  If dry yeast comes into contact with the liquid, the dough may not rise sufficiently.

Insert the Baking Pan into the Home Bakery and close the Lid.  Plug in the Power Cord and select the course, crust setting and press the START button.

NOTE:  If the dough doesn't form into one smooth ball during the early on kneading process (view through see through window); open cover and add 1 tablespoon of water to the dough ball one tablespoon at a time until the dough forms one smooth ball.  It took three attempts at this recipe to get the bread to bake one level even loaf.  I had to add about 4 tablespoons of additional water   during the kneading cycle one tablespoon at a time to get the loaf to bake even and rise to it's full potential.  Below pixs was the first attempt.   Updated on 06-03-12.

When beeps sound add the raisins, separate before adding.

At the end of the baking cycle, remove the Baking Pan and remove bread immediately from the Baking Pan.  Allow bread to cool on a metal rack, slice and serve with your favorite condiments.
