CANDIED YAMS
INGREDIENTS:
4 cups sugar
1 cup water
8 medium sweet potatoes
Black pepper
1/2 stick margarine (or more)
Cook sweet potatoes whole in boiling water until just done enough to peel
easily. Note: My bride peeled the sweet potatoes and
halved before boiling. Do not cook until done. Cool and peel.
Slice lengthwise and put them in a long baking pan. Don't use a glass
dish. Spray pan with a vegetable spray such as Pam or
equivalent brand! Boil sugar and water until the sugar dissolves.
Pour over potatoes after you pat them with margarine and sprinkle with black
pepper. Cook in 400 degree oven until candied; approximately 1 hour.

This dish is outstanding and I know what you are thinking,
"black pepper" in a yam recipe. I have had sweet potato pie before
that had a sprinkling of black pepper added to the ingredients and it will
certainly surprise you. Try this recipe and become a believer and not
a Doubting Thomas! This recipe could easily fall into the
Dessert category.
