QUAIL BAKED IN MUSHROOM SAUCE

INGREDIENTS:

4 whole quail
10 3/4 ounce can of condensed cream of mushroom soup
1/2 soup can of milk
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Salt & black pepper to taste
Thyme
Vegetable cooking spray

Preheat oven to 350 degrees.  Coat a 5 x 9 inch casserole dish with vegetable cooking spray and place the quail, breast side up in the dish.  Sprinkle salt, pepper and thyme over the quail. In a bowl, combine the cream of mushroom soup and milk. Pour the mixture over the quail making sure that each breast has been coated with the soup.  Cook uncovered at 350 degrees for 30 minutes.  After 30 minutes, remove the casserole and sprinkle with both cheeses and return to oven for an additional 30 minutes or until the cheese becomes a golden brown.

I like to serve this quail dish with rice using the mushroom sauce as a gravy over the rice.  I use long grain rice such as Mahatmas brand and add 2 cups rice to 4 cups of chicken stock and bring to a boil and reduce heat and simmer for 30 minutes with lid on pot.  With this dish you should also serve a very colorful vegetable such as green beans, carrots or tomatoes and garnish with fresh parsley for presentation.  A nice white wine will complement this meal.  Serves four, but if you are serving big eaters you may want to double the recipe.
