Nellie's BBQ Chicken

 NELLIE'S BAR-B-Q CHICKEN

SAUCE:

1/2 cup tomato catsup
1/4 cup water
2 tablespoons brown sugar
2 tablespoons vinegar
2 1/2 tablespoons Worcestershire sauce

Melt 1 stick margarine in pan or ovenproof dish 9 x 13 inches.  Roll cut up fryer in flour with salt and pepper to taste placing breast side down and cook in 350 degree oven for 1 hour and 15 minutes.  Turn chicken pieces over and pour sauce over chicken  and cook an additional 20 minutes longer.

Note:  This recipe is from Joyce Porter's Mama's personal hand written cookbook (Nellie Adcock).  You can't go wrong with this recipe.  Be sure and have an couple extra napkins close at hand.  After you have tried this BBQ recipe, you will probably retire all other oven baked BBQ chicken recipes.

I usually will double the BBQ sauce recipe and have plenty extra for "sopping".

Above pix taken June 20, 2008;   my bride and myself served up the BBQ chicken  with a stout helping of mashed potatoes, string beans with onions and a fresh toss salad.   I am as "tight as a Georgia tick on the back of a coonhound in the month of July."  Bill Porter 06-30-08.
